The omelet is a national treasure in Spain. Locally, Spanish omelettes are known as Española tortillas – which literally translates as "little Spanish cake" or "Spanish cake" – a special type of omelet prepared by boiling potatoes and onions in an abundant amount of extra virgin olive oil. Eggs in large quantities are also whipped separately in a bowl. Once the potatoes and onions are tender and golden, combine them with the eggs in the bowl, then return the mixture to the pan. After the eggs are cooked, stir the omelet using another dish, and cook on the other side until brown. Open the crunchy baguette lengthwise, and brush both sides with peeled tomatoes, table salt and olive oil. Cut the tortillas into slices and place them between the two slices of bread. Finally, place the omelette in the sandwich press until it is crisier than before.
Unless you want to stick to tradition, you don't have to prepare a Spanish omelette to enjoy an omelette sandwich. For example, it can be prepared with annotated bread and even toast. In fact, everything tastes great when you're hungry. You can add meat, a slice or two of cheese, or an avocado sprinkled with lemon.

If you want to make a flowery sandwich, and you have time to step away from simplicity, here's how.
Ingredients:
1.5 pounds (about 800 grams) of potatoes,
1/4 cup virgin olive oil,
small white onion, cut into thin slices,
Eggs
tablespoon of cooking cream (optional),
salt
black pepper
French bread or bread,
One or two fresh, ripe tomatoes.
1- Peel the potatoes, and cut them into slices about half a centimeter thick.
2- Place them in the center of a clean cotton dish towel, then mix the pieces lightly. Fold the towel comfortably around the potatoes, overlapping all edges to form a burrito-like package.
3- Insert the package into the microwave oven for increasing periods of 60 seconds, stirring the package and shaking it slightly after each cycle in the oven, until the potatoes are transparent. This should take 3 to 4 minutes. Potatoes should remain tender, but firm. Be careful to pay attention to the hot package and the steam that will come out when opened.
4- Preheat oven to 200°C. Heat olive oil in a skillet over medium-high heat. Add onions and potatoes carefully and cook until onions are tender, stirring frequently, for 5 to 7 minutes. Neither onions nor potatoes should turn brown, it is enough that they become soft. Adjust the temperature as necessary.
5- Beat the eggs and cream (if used), and pour them into the pan. Pull the edges of the mixture outward to allow the eggs to reach the bottom of the pan. Repeat around the edges until you finish the whole omelet several times and the bottom begins to firm, about 5 minutes. Sprinkle with salt and pepper on top.
6- Place the pan in the oven and cook the omelet until cooked, which is about 8 to 10 minutes. Be careful not to overcook; the top should look slightly shiny with eggs and not be brown.
7- Remove from the oven and allow to cool until it reaches room temperature.
8- To prepare the sandwiches, cut the baguette into four pieces of equal length, then open them lengthwise. If you are using annotated bread, just open the loaf.
9- Cut the tomatoes crosswise. In one half of the loaf, vigorously pass the cut part of the tomatoes over the loaf, wiping the juice, seeds and some tomatoes on the bread. Add to the above sliced omelets. Spread a little garlic, assemble the sandwich, wrap it in paper, and pretend you're in Spanish. and health and wellness.
