بصلة كبيرة مفرومة "مقطعة قطع صغيرة"
4 ملاعق زيت زيتون
ربطة سبانخ مقطعه "قطع كبيرة نسبيا"
ملح وكمون وكزبرة وكراوية

4 ملاعق جبنة ريكوتا "أو أي نوع جبن ﺁخر حسب الرغبة"

نصف كوب زبدة ذائبة
نصف كوب زيت ذرة "أو أي زيت نباتي"
سمسم أو حبة البركة "يمكن الاستغناء عنه"
طريقة التحضير:
صوص التسقية:
نضرب بيضتين مع القليل من الملح والفلفل ثم نضيف اللبن ونستمر في الخفق ثم نضيف الزبدة ونمزجهم سويا ثم نضيف زيت الذرة ونخلط جيدا.
تحضير الخلطة والطهي:
نضع زيت الزيتون في طاسة ونقوم بإضافة البصل المفروم للزيت الساخن مع التقليب نقوم بإضافة القليل من الملح ونستمر في التقليب. ثم نقوم بإضافة السبانخ وتقليبها حتى تبدأ في الذبول قليلا ثم نضيف القليل من الكمون والكزبرة والكراوية ونستمر في التقليب ثم تترك علي نار هادئة لعدة دقائق ثم نضيف الثوم ثم نغطي ونتركها حتي يتبخر الماء منها وتصير جافة تماما. ترفع من النار وتترك لتهدأ. نضيف الجبنة ونقلب ثم نضيف عدد 2 بيضة ونخلطهم جيدا.
نفرد ورق الجلاش "ورقتين في كل مرة" ندهن الورق بصوص التسقية "يفضل استعمال فرشاة لتوزيعه جيدا" ثم نقوم بفرد السبانخ بعرض الورق ولف الورق علي هيئة رول " شكل أسطواني" حول السبانخ مع ترك الحافة دون حشو لتجنب خروجها أثناء الطهي. يمكن أيضا حشو الجلاش بدون لف بعد فرد طبقات الجلاش في الصينية ودهن الطبقات بصوص التسقية أيضا. ترص الأسطوانات في صينية مدهونة بالزبد ثم تدهن كل الأسطوانات بصوص التسقية حتى نحصل على بوريك لين. ثم نقوم برش السمسم أو حبة البركة علي الوجه "حسب الرغبة" ثم نقوم بتقطيعه بنفس طريقة البقلاوة. ثم ندخل الصينية للفرن حتى تمام النضج والحصول علي لون ذهبي أو بني فاتح. يقدم ساخن أو دافئ حسب الرغبة.

مكعب زبدة " ما يعادل 3 ملاعق زبدة
ملح + جوزة الطيب المطحونة+ فلفل أبيض
مكعب مرقة خضراوات أو دجاج "يمكن الاستغناء عنه"

طريقة التحضير:
نضع الزبدة مع البصل ونقلب حتى اللون الذهبي، بعد أن يذبل البصل نضيف الجزر والبطاطس المقطعين لمربعات صغيرة. نستمر في التقليب لمدة دقيقة ثم نضيف الماء ونتركها على نار متوسطه مع ترك الغطاء فوقها دون إحكام غلقه حتى لا يفور الماء خارج الإناء. بعد 20 دقيقة نقوم بضرب الخليط باستخدام هاند بليندر أو خلاط عادى. نعيده إلى النار ونضيف التوابل ونختبر الطعم وإذا كانت كثيفة أكثر من المرغوب نخففها بالقليل من الماء تدريجيا حتى نصل للقوام المرغوب.
